Identifying the Taste of Fat
Why do we like to eat foods with high fat content?  The answer seems simple, fatty foods tend to taste better!  However, the field of taste research has largely ignored the possibility that fat may activate the taste system.  Recent research conducted at Wofford has proven that there is a taste component of fat, at least in an animal model.  These experiments and their implications on developing highly palatable low-fat foods will be discussed.
